Quick and Good Peach Cobbler

Found in a cookbook obtained at an estate sale in Richardson, Tx on 3/23/2017. Book is titled ‘From the Kitchens of First Baptist,’ said to have been sponsored by the Corian Choir with First Baptist Church in Carthage, Miss. Additional note states that the proceeds from t he book go to send the youth of the church on a mission tour in July 1971. This recipe is attributed to Mrs. E. P. Barr.

  • 2 cups peaches
  • 1/2 cup sugar

set oven at 350°. Put 1/2 stick of margarine in deep baking dish and melt.

Make a batter of:

  • 1 cup sugar
  • 3/4 cup plain flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 cup milk

Pour batter over melted margarine. Do not stir. Put sugared peaches over batter. Do not stir. (When done peaches will be on bottom) Put in oven and bake.
