Recipe on a notecard, labeled ‘here’s what’s cooking.’ Recipe is attributed to Sandy Koren. This recipe came from a recipe box obtained at a Richardson, Tx estate sale on 3/23/2017.

  • 7 cups water
  • 1 lb. pinto beans (raw)
  • 3 lb. chuck roast
  • 1/2 cup chopped onions
  • 2 cloves garlic
  • 1 T salt
  • 2 T chili powder
  • 1 tsp. oregano
  • 1 can chopped green chili

Combine all in a dutch oven or large cooker. Bring to boil then turn to simmer. Cook 6 hours on simmer. Remove lid and spread meat. Cook without top until it thickens (30 min)

Layer the following:

  • chalupa shell
  • meat
  • guacamole
  • lettuce
  • tomato
  • green onion
  • cheddar cheese
  • hot sauce

Makes a lot!
